Banana Bread Muffins

I had some bananas that were a little too ripe for me to eat, so I decided to make some banana bread muffins. This is just an easy classic recipe and I usually have the ingredients on hand. Whenever I find that I have some bananas that are just a bit too gushy to eat I throw together a bread or some muffins. This sweet bread can be a filling breakfast or a scrumptious dessert.
Ingredients:
- 1 cup sugar
- 1 stick butter (room temp)
- 2 eggs
- 3 ripe bananas
- 1 tablespoon milk
- 1 teaspoon cinnamon
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Cream the butter and sugar together and add eggs one at the time, mixing well after each egg. In a separate bowl, mash the bananas and add cinnamon and milk then mix everything together. In a third bowl mix together flour, baking powder, baking soda and salt. Mix the banana mixture and sugar mixture, then add the flour mixture. Pour into greased loaf pan or muffin pan. Bake at 325° for 25 minutes for muffins or 1 hour for a loaf. This recipe makes 12 large muffins, 24 small muffins or one loaf.
