Clam Chowder

I love winter comfort foods and this chowder is just that!  It is thick, creamy and delicious.  This chowder is packed with flavor, the bacon and clams are a yummy combo.  Where lots of soups leave you a bit hungry an hour later, this fills you up for hours.

Ingredients:

6 pieces of bacon cut into small pieces

10 ounces of whole canned baby clams

7 red potatoes cubed

2 cans of Cream of Celery

1 cup heavy cream

1 cup milk

1 tablespoon butter

salt and pepper to taste

Cook bacon until crispy then add juice from cans of clams.  Add potatoes and cover, cook for about 15 minutes or until potatoes are  tender(stirring occasionally).  Add clams, cream of celery soup, milk , butter and heavy cream, season and stir together.   Cover and cook about 10 minutes or until thickened to your liking.  Serves 6.  (Adapted from Recipe Zaar.)                                                                                                                                                        

Christmas Trail Mix

Ingredients:

13 oz of white chocolate covered pretzels.

12.5 oz of red and green M & Ms

10 oz mixed nuts

7 oz of raisins

There is actually no cooking involved in this recipe,  just mix all of the ingredients together and toss in a festive dish.  It is the perfect thing to have on hand to snack on through the holidays or to put out at a Christmas get together while guest are waiting for the food to be ready. I bought the pretzels for this, but they could easily be made.  This recipe also makes a huge amount, so you may want to cut it in half unless you are having a big get together.

Pizza Roll Ups

Ingredients:

6 tortilla shells

1/4 c pizza sauce

1/4 c Italian blend of  cheese

mini pepperoni’s  ( You could slice up big ones, but the mini are so cute I just love using them!)

Lay tortilla shell flat and cover with pizza sauce (not too much because it will make everything messy when trying to roll).  Cover sauce with cheese and pepperoni to taste.  Tightly roll the tortilla shell up and  place on greased cookie sheet.  Bake at 350 degrees for 7 minutes.  Serves 2.

These are perfect for a quick lunch.  They are all of the deliciousness of a pizza rolled up.  There are endless possibilities for ways to make these, but I was just trying to use up some things in our fridge before we leave to go see our families for an extended stay at Christmas!   The pizza roll ups could also be made in the microwave if you needed a lunch that could be made at the office, but I love the crispiness that the oven gives them.

Mexican Mac & Cheese

I am constantly trying to come up with new Mexican dishes that both my husband and I will enjoy.  So, the other day I was flipping through a Sandra Lee cookbook from the library and I saw a recipe using boxed macaroni and adding  taco seasoning for a side dish.  It sounded yummy and I immediately thought if I added meat to that it could instantly turn into the easiest main dish of all time. I was right!  Dinner was ready in about ten minutes and Christian loved loved loved it!  It is so funny how I think he truly enjoys the easy meals more than the ones that I work on for hours!

Ingredients:

1 pound ground beef

1 box of kraft macaroni and cheese

1/4 cup taco seasoning mix (or 1 packet)

2/3 cup of water

1/3 cup of taco sauce

Cook macaroni as directed on packaging and set aside.  Cook ground beef  and drain.  Add taco seasoning and water to ground beef and simmer about 5 minutes.  Mix ground beef and taco sauce with macaroni.  Serves 4.

Chicken Noodle Soup

Chicken noodle soup is absolutely my favorite winter classic! When I am sick, when it is rainy or when it is sunny and I feel fantastic, any time in the winter is the perfect day for chicken noodle soup! The recipe I make is by no means an original creation. Yet, I am not sure who to credit it to. I have had it from many people through the years, my family had it growing up, my best friend’s mom, Mrs. Janet made it when I was in high school. It is also all over the internet . I have seen it on many different sites with only slight variations. There is no reason for me to alter this recipe, because it is delicious just the way that it is! I do make sure that mine has lots of carrots, because I love carrots, specifically baby carrots. I kind of do the recipe from memory, because it is so simple, so the recipe varies each time. This time I made sure to pay attention so that I could share it with yall.

Ingredients:

13 cups chicken broth

1 celery stick finely chopped

1 pound bag of baby carrots diced

4 cups of cooked chicken pieces

4 cups uncooked wide egg noodles

1 tsp parsley

salt and pepper to taste

Bring the broth to a boil and add the veggies and seasoning. Boil covered for about 20-30 minutes or until carrots are tender. Add the noodles and chicken and continue to boil (uncovered) for about 10 minutes. Serves 6.

Shepherd’s Pie

I never in my life had Shepherd’s pie until 2 years ago.   I was recently married and at Christian’s parents house.  His mom made Shepherd’s Pie.  I normally am not a fan of my food touching, so you would assume I would hate Shepherd’s Pie (since it is just food all mixed together), but I loved it.  A  few weeks later, I began to look online for Shepherd’s Pie recipes and found one on Cooks.com that looked interesting. One of the ingredients in that recipe was actually sugar.  I love anything with sugar, but sugar with meat in potatoes was a new idea.  A new idea that I couldn’t wait to try! :)  I adapted the recipe to make it my own and have made it ever since.  This dish is slightly sweet but not overpowering.  It still has the classic meat and potatoes taste with a twist.   We all know that the best recipes have a twist to them!

Ingredients:

6 medium red potatoes                                                          

milk to taste

butter to taste

1 lb ground beef

1 can sweet peas (drained)

1 can whole kernel sweet corn (drained)

1/3 cup of sugar

2 cups shredded cheddar cheese

Boil potatoes until tender (about 20 minutes).  Meanwhile, brown ground beef  in separate pot and drain.  Add the sugar, peas and corn to the meat and cook until heated through.  Pour meat and veggie mixture in bottom of 9 X 13 casserole dish.  Mash potatoes and add milk and butter until you reach the right consistency.   Put mashed potatoes over meat and veggies and cover with cheese.  Broil in oven until cheese melts (about 3-5 minutes).

Easy Chicken and Dumplings

I am not a fan of  Bisquick mix for things such as pancakes.  I like light and fluffy pancakes and Bisquick  does not achieve these results for me.   I admit I have not tried Bisquick for  hardly anything besides pancakes.  However, if I am making dumplings Bisquick is the best!   It makes quick  and delicious dumplings.  In my opinion it just isn’t worth making dumplings from scratch.  They don’t taste any better and require more time.  So, here is my recipe for the easiest and tastiest Chicken and Dumplings.

Ingredients:                                                                                                      

1 cup of chicken broth

4 cups of bisquick

1 1/3 cups of milk

3-4  cups of chicken pieces (I used about 4 leg quarters)

parsley, salt and pepper to taste

Bay leaf

Boil the leg quarters with a  bay leaf and some salt and pepper for seasoning until done (this will take about 20-30 minutes).   Reserve water (removing bay leaf) and pull meat off of leg quarters.   Add the chicken broth to water and boil.   Mix Bisquick and milk together.  Drop mixture by tablespoons into boiling liquid.  Reduce heat to med low and cook for 10 minutes, then add the chicken.  Season to taste.  Cover and cook an additional 10 minutes.   Remove from heat and allow chicken and dumplings to thicken.  This makes about 5 servings.

Italian Parmesan Chicken

I have said before that I would never have Italian dressing on a salad, but I love it on just about everything else!   It is my no fail ingredient.   I think you could add Italian dressing to anything and it would instantly be a fantastic meal.  This dish was so simple, but my husband, Christian, raved about it.  He went on and on about how much he loved it!   I hated to tell him how simple the dish really was.  This 3 ingredient dish is crispy and moist all at the same time.

Ingredients:

  • 1 packet of Parmesan Crusted Shake ‘N Bake                                            
  • 1/3 cup of  Kraft Zesty Italian Dressing
  • 4  boneless Chicken breast

Dip the chicken in the Italian dressing then toss it is the shaker bag that comes with the shake ‘n bake.   Bake at 400 degrees for about 30 minutes.

Cocoa and Caramel Brownies

I got the base of this recipe from the back of  a Nestle Cocoa container.  I have tried many homemade brownies recipes and never loved the results.  Honestly, I am not sure if it was me or the recipes that I was trying, but the boxed ones always seemed to turn out better.  This recipe came out perfectly chewy and moist!   It is a no fail recipe.  It didn’t take much longer than boxed brownies and was more delicious.  I wanted something a little different than just plain brownies and the caramel that I added hit the spot.  I will be making these brownies again and again!

Ingredients:

  • 3/4 cup of sugar
  • 1/2 cup of butter (melted)
  • 1 tbsp of water
  • 1 egg
  • 1 tsp vanilla extract
  • 2/3 cup of flour
  • 1/2 cup of baking cocoa
  • 1/4 tsp of baking powder
  • 1/8 tsp of salt
  • 1/4  cup of caramel

Combine the sugar, butter and water and then stir in the egg and vanilla.  In a separate bowl, mix the flour, cocoa, baking powder and salt and then stir into sugar mixture.  Stir the caramel into the batter and pour into a greased 9 x9 pan. Bake for 25 minutes at 350 degrees.   I drizzled some more caramel over the top before serving.

Enchilada Rice Casserole

My husband loves Mexican dishes, but I don’t eat tomatoes, peppers or onions.  Due to my aversion to these vegetables, the range of Mexican dishes that I can make (and eat) is limited.  When I realized that we had not had a Mexican night in quite a while, I wondered what simple dish I could make besides the common place  taco or quesadilla meal.  I pulled some items together from my pantry and I ended up with a very filling, simple and scrumptious  meal.  It hit the spot for both my husband and I.

Ingredients:

  • 1 lb ground meat (cooked)
  • 1 cup brown rice (cooked)
  • 1   5 oz package of Mahatma Saffron Yellow rice  (cooked)
  • 2   10 oz cans of enchilada sauce
  • 2 cups of sharp cheddar cheese

Mix first 4 ingredients together and top with shredded cheese.  Bake at 350 degrees for 30 minutes.
