Clam Chowder

I love winter comfort foods and this chowder is just that!  It is thick, creamy and delicious.  This chowder is packed with flavor, the bacon and clams are a yummy combo.  Where lots of soups leave you a bit hungry an hour later, this fills you up for hours.

Ingredients:

6 pieces of bacon cut into small pieces

10 ounces of whole canned baby clams

7 red potatoes cubed

2 cans of Cream of Celery

1 cup heavy cream

1 cup milk

1 tablespoon butter

salt and pepper to taste

Cook bacon until crispy then add juice from cans of clams.  Add potatoes and cover, cook for about 15 minutes or until potatoes are  tender(stirring occasionally).  Add clams, cream of celery soup, milk , butter and heavy cream, season and stir together.   Cover and cook about 10 minutes or until thickened to your liking.  Serves 6.  (Adapted from Recipe Zaar.)                                                                                                                                                        

Chicken Noodle Soup

Chicken noodle soup is absolutely my favorite winter classic! When I am sick, when it is rainy or when it is sunny and I feel fantastic, any time in the winter is the perfect day for chicken noodle soup! The recipe I make is by no means an original creation. Yet, I am not sure who to credit it to. I have had it from many people through the years, my family had it growing up, my best friend’s mom, Mrs. Janet made it when I was in high school. It is also all over the internet . I have seen it on many different sites with only slight variations. There is no reason for me to alter this recipe, because it is delicious just the way that it is! I do make sure that mine has lots of carrots, because I love carrots, specifically baby carrots. I kind of do the recipe from memory, because it is so simple, so the recipe varies each time. This time I made sure to pay attention so that I could share it with yall.

Ingredients:

13 cups chicken broth

1 celery stick finely chopped

1 pound bag of baby carrots diced

4 cups of cooked chicken pieces

4 cups uncooked wide egg noodles

1 tsp parsley

salt and pepper to taste

Bring the broth to a boil and add the veggies and seasoning. Boil covered for about 20-30 minutes or until carrots are tender. Add the noodles and chicken and continue to boil (uncovered) for about 10 minutes. Serves 6.

Easy Chicken and Dumplings

I am not a fan of  Bisquick mix for things such as pancakes.  I like light and fluffy pancakes and Bisquick  does not achieve these results for me.   I admit I have not tried Bisquick for  hardly anything besides pancakes.  However, if I am making dumplings Bisquick is the best!   It makes quick  and delicious dumplings.  In my opinion it just isn’t worth making dumplings from scratch.  They don’t taste any better and require more time.  So, here is my recipe for the easiest and tastiest Chicken and Dumplings.

Ingredients:                                                                                                      

1 cup of chicken broth

4 cups of bisquick

1 1/3 cups of milk

3-4  cups of chicken pieces (I used about 4 leg quarters)

parsley, salt and pepper to taste

Bay leaf

Boil the leg quarters with a  bay leaf and some salt and pepper for seasoning until done (this will take about 20-30 minutes).   Reserve water (removing bay leaf) and pull meat off of leg quarters.   Add the chicken broth to water and boil.   Mix Bisquick and milk together.  Drop mixture by tablespoons into boiling liquid.  Reduce heat to med low and cook for 10 minutes, then add the chicken.  Season to taste.  Cover and cook an additional 10 minutes.   Remove from heat and allow chicken and dumplings to thicken.  This makes about 5 servings.

Lemon-Chicken and Rice Soup

Yum Yum Yummy!!  What could be better than some warm soup today?  It is rainy and cold so it is the perfect soup weather.  I originally got this recipe from a Williams-Sonoma cookbook, but I made a few changes.  I love the heartiness of chicken and rice soup recipes, they scream winter comfort food to me.  I also love classic recipes with a twist.  This recipe is just that!  The lemon flavor is subtle yet still adds a little something to this soup.  I just finished a piping hot bowl and I am already excited about having another bowl for lunch tomorrow. :)

Ingredients:

  • 2 cups brown rice
  • 6 cups chicken broth
  • 2 1/2 cups of chicken pieces (I boiled 3 leg quarters and used the meat and broth)
  • 2 teaspoons of cornstarch
  • 6 egg yolks
  • Lemon juice from 1 lemon
  • 2 tablespoons of water

Cook rice as directed on package.  Mix together the cornstarch and water.  Simmer the chicken broth.  Whisk together the lemon juice and egg yolks over low heat.  Then, add the cornstarch mixture and 2 cups  of the chicken broth, whisk this over medium heat about 5 minutes ( the sauce will begin to thicken).   Next, add the chicken to the simmering broth and whisk in the egg/lemon sauce mixture. Stir the rice into the soup and add salt and pepper to taste.  Cook about 3 minutes and serve. Serves about 6.

Mexican Chili

This weekend Christian was watching football all day and it was a crisp fall day.  I felt the urge to make some chili and what goes better with fall and football than chili? Now, I have never made a chili recipe before because I don’t care for it. I wish I did, because Saturday would have been the perfect day to curl up with a warm bowl of chili. Christian is a big fan of Mexican food, so I decided to make Mexican Chili.  He rated it a 4/5.  Here’s the super easy recipe.

Ingredients

  • 1 pound ground beef
  • 45 oz kidney beans drained
  • 30 oz canned diced tomatoes drained
  • 2 cups chunky salsa
  • 3 tbsp chili powder

Brown the meat with 1-1/2 tbsp of chili powder.  Drain meat and combine everything  in a pot.  Bring to a boil.  Simmer on medium heat about 15 minutes.  This serves four.  Since I don’t eat it, I froze two servings for him to have later.  This is such a quick and easy recipe.  The salsa takes a simple everyday recipe to the next level.
