Chicken Pot Pie

Chicken pot pie has always been one of my favorite cold weather foods growing up. There is just something amazing yet simple about chicken pot pie. I make a very simple semi-homemade version of it, but it is superb! I use mixed frozen vegetables which gives the pie a sweet crunch and make the recipe easy to throw together. This is a tried and true recipe that I have made over and over through the years.
Ingredients:
- 1 cup cubed cooked chicken breast
- 1/2 cup chicken broth mixed with 1 tablespoon flour
- 1 can cream of chicken
- 1c frozen mixed vegetables ( I use a mix of carrots, green beans, and corn)
- 2 pie shells
Mix everything together and toss it in the bottom shell, then cover with the top shell. Cook for 35 minutes at 400°.
