Cocoa and Caramel Brownies

I got the base of this recipe from the back of  a Nestle Cocoa container.  I have tried many homemade brownies recipes and never loved the results.  Honestly, I am not sure if it was me or the recipes that I was trying, but the boxed ones always seemed to turn out better.  This recipe came out perfectly chewy and moist!   It is a no fail recipe.  It didn’t take much longer than boxed brownies and was more delicious.  I wanted something a little different than just plain brownies and the caramel that I added hit the spot.  I will be making these brownies again and again!

Ingredients:

  • 3/4 cup of sugar
  • 1/2 cup of butter (melted)
  • 1 tbsp of water
  • 1 egg
  • 1 tsp vanilla extract
  • 2/3 cup of flour
  • 1/2 cup of baking cocoa
  • 1/4 tsp of baking powder
  • 1/8 tsp of salt
  • 1/4  cup of caramel

Combine the sugar, butter and water and then stir in the egg and vanilla.  In a separate bowl, mix the flour, cocoa, baking powder and salt and then stir into sugar mixture.  Stir the caramel into the batter and pour into a greased 9 x9 pan. Bake for 25 minutes at 350 degrees.   I drizzled some more caramel over the top before serving.

Candy Apples

  • CAndy AppleI had some apples left over from when I made the granny smith apple pie and I wanted to make something festive.  I decided to make candy apples!  I always love anything that combines the tart and sweet and this recipe does just that!  I also love the delightful crunchy and juicy mix that I get when I bite into one of these.
  • 8 granny smith apples
  • 4 cups of sugar
  • 1¼ cups of water

Directions:

Combine sugar and water in pot and stir until sugar has dissolved.  Do not allow to boil. Once sugar has dissolved use a brush dipped in cold water to brush away sugar crystals on side of pot.  Allow syrup to boil and continue to boil until it reaches a golden color, this may take about 15  minutes. Remove pot from heat and dip base in cold water to stop deepening of syrup color. Dip the apples in the syrup or drizzle the syrup onto the apple.  I like to do a combination of both. First, I dip the bottom of apple into syrup then I drizzle syrup over apple to give it that dripping look. Place on oiled foil to cool.

Granny Smith Apple Pie

Granny Smith Apple Pie As the seasons change I find myself craving my seasonal favorites.  One of favorite desserts for fall (and an American classic)  is apple pie, specifically granny smith apple pie.   I love the combination of the tart apples, the sweet filling, and the crispy crust.  I recently made this warm delight and ate almost half of the pie by myself!

  • 2 pie crust ( I use pre-made crust)
  • 1 stick of butter
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 1/4 cup of water
  • 3 tbls of flour
  • 3 granny smith apples

Directions:

Peel the apples and dice them up, then mound them in the bottom crust.  Melt the butter over medium low heat on stove top then stir in flour. Add both sugars and water to flour mixture and bring to a boil.  Reduce heat to low and simmer filling mixture for 5 minutes.  As the filling mixture simmers, place a lattice crust over apples.  Next, gently pour filling mixture over the crust, it will seep into the pie and fill the nooks.   Bake the pie 15 minutes at 425 degrees. Reduce heat to 350 degrees and bake 40 more minutes.   Enjoy!  :)
