Lemon Pepper and Parsley Chicken

Though the temp is in the 40s here this week, I have been dreaming of summer.  Lemon chicken reminds me of summer so last night I made it  for dinner and it was delicious!   The Parmesan cheese complemented the lemon perfectly.  I baked this in the oven…but I am dreaming of a warm winter night where I can go outside and toss this on the grill with some woodchips.  :)

Ingredients:

Juice of 1 lemon

1 garlic clove pressed

3/4 tsp parsley flakes

1/2 tsp fresh ground pepper

1/4 cup of Parmesan  cheese

4 boneless skinless chicken breast

Mix  the first 4 ingredients together  and brush onto both sides of  chicken breast.  Pour remaining  lemon mixture over chicken and top with cheese.  Bake at 350 degrees for about 30 minutes.  Serves 4.
